Pan-Seared Barramundi with Vietnamese Curry Sauce
A flavorful and aromatic dish that combines the delicate flavor of barramundi with the bold spices of Vietnamese curry sauce.
Ingredients
- β4 barramundi fillets1.5 lbs total
- β2 tbsp coconut oil
- β2 tbsp curry pasteVietnamese-style
- β1 tbsp fish sauce
- β1 tsp brown sugar
- β2 tbsp lime juice
- β chopped cilantrofor garnish
- β chopped scallionsfor garnish
Instructions

Season the barramundi fillets with salt and pepper.

Heat the coconut oil in a large skillet over medium-high heat.

Add the barramundi fillets and sear for 3-4 minutes on each side, or until cooked through.

Remove the barramundi from the skillet and set aside.

In the same skillet, add the curry paste and cook for 1-2 minutes, or until fragrant.

Add the fish sauce, brown sugar, and lime juice to the skillet and stir to combine.

Return the barramundi to the skillet and spoon some of the curry sauce over the top.
