Smoky Lamb Stew

- β6 slices smoked bacon
- β1 large onion
- β3 cloves garlic
- β4 medium carrots
- β2 stalks celery
- β2 tsp smoked paprika
- β1 tsp salt
- β1 tsp pepper
- β2 tbsp dutch mustard

Brown the lamb shoulder in a large Dutch oven over medium-high heat.

Remove the lamb from the pot and set it aside.

Add the sliced bacon to the pot and cook until crispy.

Remove the bacon from the pot and set it aside with the lamb.

Add the sliced onion to the pot and cook until softened.
