Smoky Potato Salad
A classic potato salad with a smoky twist, perfect for a summer barbecue.
Ingredients
- β2 large potatoes
- β1/4 cup, chopped (smoked paprika) smokyoptional
- β2 tablespoons, chopped (fresh parsley) juicyoptional
- β1/2 cup mayonnaisestore-bought or homemade
Instructions

Boil the potatoes in a large pot of salted water until tender, about 10-12 minutes.

Drain the potatoes and let them cool to room temperature.

In a separate bowl, whisk together the mayonnaise and chopped parsley (if using).

Add the cooled potatoes to the bowl and toss until they are well coated with the dressing.

If using smoked paprika, stir it in to give the salad a smoky flavor.

Season with salt and pepper to taste.

Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
