Indian Vegetable Rasam
A flavorful and comforting South Indian rasam recipe made with fresh vegetables and spices. This dish is perfect for a chilly evening or as a side for your favorite Indian meals.
Ingredients

- ●1 medium Onionjuicy
- ●1 large Tomatojuicy
- ●1 medium Carrotsnappy
- ●1 medium Potatosnappy
- ●1 can Coconut milk
- ●2 teaspoons Rasam powderindian
- ●to taste Salt
- ●4 cups Water

Heat oil in a large pan over medium heat.

Add the chopped onion and sauté until it turns translucent.

Add the chopped tomato and sauté for another 2 minutes.

Add the chopped carrot and potato and sauté for 3-4 minutes.

Add the rasam powder and mix well.

Add the coconut milk and mix well.

Add the water and bring the mixture to a boil.

Reduce the heat to low and let it simmer for 10-15 minutes.
