Uruguayan Beef Empanadas
Delicious beef empanadas filled with a flavorful mix of juicy beef, onions, and spices, wrapped in a crispy dough crust.
Ingredients
- β1 pound Ground beef80/20 lean to fat ratio
- β1 medium, finely chopped Onioncaramelized
- β1/2 cup, crumbled Uruguayan cheeseoptional
- β2 tablespoons Sour creamfor serving
- βhomemade or store-bought, 1 package Dough thawed
- β1, for egg wash Egg, beaten
- β Salt and pepperto taste

Preheat oven to 375Β°F (190Β°C).

In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.

Add the chopped onion to the skillet and cook until caramelized, about 5 minutes.

Stir in the Uruguayan cheese, if using. Season with salt and pepper to taste.

On a lightly floured surface, roll out the dough to a thickness of about 1/8 inch.

Use a cookie cutter or the rim of a glass to cut out circles of dough.

Place a tablespoon or two of the beef mixture in the center of each dough circle.

Brush the edges of the dough with the beaten egg and fold the dough in half to form a half-moon shape.

Press the edges together to seal the empanada and use a fork to crimp the edges.

Place the empanadas on a baking sheet lined with parchment paper.

Brush the tops with the remaining egg wash and bake for 20-25 minutes, or until golden brown.
