Mujadara Italiano
A twist on the classic Middle Eastern mujadara, this Italian-inspired dish combines the flavors of Italy with the hearty goodness of lentils.
Ingredients
- ●1 cup lentilsgreen or brown lentils work well
- ●1 cup middle eastern mujadara riceor regular long-grain rice
- ●4 cups spring waterfor cooking the lentils
- ●2 tbsp olive oilfor sautéing the onions
- ●1 large onionschopped
- ●2 cloves garlicminced
- ●2 tbsp tomato pasteoptional, for added depth
- ●1 tsp saltto taste
- ●1/4 cup fresh parsleychopped, for garnish
- ●1 tsp juicy eastern-style red pepper flakesoptional, for added heat
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onions and sauté until they're translucent and starting to caramelize.

Add the minced garlic and cook for another minute, until fragrant.

Add the lentils, rice, spring water, salt, and tomato paste (if using).

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the lentils and rice are tender.

Fluff the mujadara with a fork and stir in the chopped parsley and red pepper flakes (if using).

Serve hot, garnished with additional parsley if desired.
