Egyptian Date Pudding
A rich and creamy dessert made with sweet Egyptian dates and a hint of honey, perfect for warm evenings.
Ingredients
- β1 cup, pitted Egyptian dates
- β1 cup, diced juicy sweet pineapple
- β2 tbsp honey
- β1 cup coconut milk
- β1 tsp vanilla extract
- β1 package (4-serving size) pudding mix

In a medium saucepan, combine dates, pineapple, and honey. Cook over medium heat, stirring frequently.

Bring the mixture to a simmer and cook for 5-7 minutes, or until the dates are soft and the liquid has thickened.

Stir in coconut milk and vanilla extract. Continue to cook for an additional 2-3 minutes.

Remove from heat and let cool slightly.

In a separate bowl, mix together pudding mix and 1 cup of cold water. Stir until well combined.

Pour the pudding mixture into individual serving cups or a large serving dish.

Pour the date mixture over the top of the pudding.
