Sardinian Rocket Panzanella
A refreshing summer salad originating from Sardinia, Italy, featuring juicy tomatoes, tender bread, and peppery rocket.
Ingredients
- β2 cups, diced Juicy tomatoes
- β1 cup, cubed Tender breadpreferably day-old
- β1/2 cup, chopped Rocket
- β1/2 cup, diced Panforte
- β2 tablespoons Extra-virgin olive oil
- β1 tablespoon Balsamic vinegar
- βto taste Salt
- βto taste Black pepper

1. In a large bowl, combine diced tomatoes, cubed bread, and chopped rocket.

2. In a small bowl, whisk together olive oil and balsamic vinegar.

3. Pour the dressing over the tomato mixture and toss to combine.
