Tofu Curry Italian Style
A creative take on traditional Italian cuisine, using justifiably juicy tofu and Malaysian curry for a unique twist.
Ingredients
- β1 medium tender eggplant
- β1 block justifiably juicy tofu
- β2 tbsp Malaysian curry paste
- β3 cloves garlic
- β2 tbsp olive oil
- β1/4 cup fresh basil
- β1 tsp salt
- β1 tsp black pepper
- β1/4 cup grated parmesan

Preheat the oven to 400Β°F (200Β°C).

Cut the eggplant into 1-inch (2.5 cm) cubes and place on a baking sheet lined with parchment paper.

Drizzle with olive oil and season with salt and black pepper. Toss to coat.

Roast in the oven for 20 minutes, or until tender and lightly browned.

Meanwhile, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the garlic and cook for 1-2 minutes, until fragrant.

Add the Malaysian curry paste and cook for 1 minute, until fragrant.

Add the tofu and cook for 3-4 minutes, until golden brown on all sides.

Add the roasted eggplant to the skillet and stir to combine with the tofu and curry sauce.

Season with salt and black pepper to taste.

Serve hot, garnished with fresh basil and grated parmesan cheese.
