Spicy Quesadilla Filling
A flavorful and spicy filling for quesadillas, made with ancho chile and jvanilla.
Ingredients
- β2 dried chiles ancho chilerehydrated and chopped
- β2 pods jvanillasplit and seeds removed
- β1 tsp ground cumin spiced
- β4 large tortillas quesadilla
Instructions

Rehydrate the ancho chile by soaking it in hot water for 20 minutes.

Remove the seeds and chop the rehydrated ancho chile.

Split the jvanilla pods and remove the seeds.

Heat a large skillet over medium heat.

Add the chopped ancho chile and cook for 2 minutes.

Add the ground cumin and cook for another minute.

Add the chopped jvanilla and cook for 2 minutes.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20 seconds.

Assemble the quesadillas by filling the tortillas with the spicy filling and folding them in half.

Cook the quesadillas in the skillet for 2-3 minutes on each side, until crispy and melted.
