Italian Chicken Skillet
A keto-friendly Italian skillet dish made with chicken, vegetables, and cheese.
Ingredients
- β1 lb Boneless, skinless chicken breast
- β2 tbsp Olive oilDivided
- β1 medium OnionSliced
- β1 medium Bell pepperSliced
- β8 oz MushroomsSliced
- β3 cloves GarlicMinced
- β1 tsp Italian seasoning
- βTo taste Salt
- βTo taste Black pepper
- β1/4 cup Fresh parsleyChopped
- β1/2 cup Grated Parmesan cheese
Instructions

Heat 1 tbsp of olive oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-6 minutes.

Transfer the chicken to a plate and set aside.

In the same skillet, add the remaining 1 tbsp of olive oil.

Add the sliced onion, bell pepper, and mushrooms to the skillet.

Cook until the vegetables are tender, about 5-7 minutes.

Add the minced garlic to the skillet and cook for 1 minute.

Stir in the Italian seasoning, salt, and pepper.

Return the chicken to the skillet and stir to coat with the vegetable mixture.
