Keto Gochi Gratin
A rich and creamy gratin made with gochi, perfect for a keto diet. This dish is a twist on the traditional French gratin, using gochi instead of potatoes.
Ingredients
- β2 cups, sliced Gochi
- β1 cup, shredded Gratin cheese
- β1/2 cup Heavy cream
- β4 tablespoons Unsalted butter
- β2 cloves, minced Garlic
- βto taste Salt
- βto taste Black pepper

Preheat the oven to 375Β°F (190Β°C).

In a large saucepan, combine the gochi and enough cold water to cover it. Bring to a boil over high heat, then drain and set aside.

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the garlic and cook for 1-2 minutes, until fragrant.

Add the gochi to the skillet and cook for 5-7 minutes, until it begins to brown.

In a separate saucepan, combine the heavy cream and grated cheese. Heat over low heat, stirring constantly, until the cheese is melted and the sauce is smooth.

In a greased 9x13 inch baking dish, arrange half of the gochi mixture in the bottom. Pour the cream and cheese sauce over the top, then sprinkle with half of the grated cheese.

Repeat the layers, starting with the remaining gochi, then the cream and cheese sauce, and finally the remaining grated cheese.

Dot the top of the gratin with the remaining 2 tablespoons of butter.

Cover the dish with aluminum foil and bake for 25-30 minutes, until the top is golden brown and the sauce is bubbly.

Remove the foil and continue baking for an additional 10-15 minutes, until the top is crispy and golden brown.
