Peruvian Chicken Bowl
A flavorful and spicy Peruvian-inspired bowl filled with chicken, avocado, and a tangy slaw.
Ingredients
- β4 oz Chicken breast
- β1/2 Avocado
- β1/2 cup Red onion
- β1/4 cup Cilantro
- β2 tbsp Lime juice
- β2 tbsp Peruvian aji amarillo pepper sauce
- βto taste Salt
- β1 cup Keto-friendly slaw mix (shredded cabbage, carrots)

1. Season the chicken breast with salt and cook in a skillet over medium-high heat for 5-6 minutes per side, or until cooked through.

2. Let the chicken rest for 2-3 minutes before slicing into thin strips.

3. In a separate bowl, mix together the diced red onion, chopped cilantro, and lime juice.

4. Add the sliced chicken to the bowl and toss to combine with the onion-cilantro mixture.

5. Serve the chicken mixture over a bed of keto-friendly slaw mix.

6. Drizzle Peruvian aji amarillo pepper sauce over the top of the bowl.
