Thai Cod Curry
A flavorful and spicy Thai curry made with cod, kicky and gooey ingredients.

Ingredients
- β4 Cod filletsFresh, 6 oz each
- β2 tbsp Thai curry pasteKicky and spicy
- β1 can Coconut milkFull-fat for creaminess
- β1/4 cup Gaeng kee-mao sauceGooey and sweet
- β8 oz Gaeng kee-mao noodlesFor serving
- β1/4 cup Thai basilFresh, chopped
- β1 tsp Fish sauceSalty and umami
- β1 tsp SugarBalances the heat
- β2 tbsp Lime juiceFreshly squeezed

Instructions

Heat oil in a pan over medium-high heat.

Add curry paste and cook, stirring constantly, for 1 minute.

Add cod fillets and cook for 2-3 minutes per side, until cooked through.

Remove cod from pan and set aside.

Add coconut milk, gaeng kee-mao sauce, fish sauce, and sugar to pan.

Bring to a simmer and cook for 2-3 minutes, until slightly thickened.

Stir in Thai basil and lime juice.

Serve cod with noodles and sauce.
