Vietnamese Spring Rolls (Gỏi Cuốn)
A classic Vietnamese dish made with fresh vegetables and herbs served with a sweet and spicy dipping sauce.
Ingredients
- ●1 package rice paper wrappers
- ●1 head cabbage
- ●none needed kinetic energy
- ●1 package banh cuon
- ●1 pound shrimpcook until pink
- ●1 package rice noodles
- ●1 bunch herbssuch as mint, basil, and cilantro
- ●1 cup peanut saucestore-bought or homemade
- ●1 cup hummusoptional
- ●1/4 cup vegetable oilfor frying
Instructions

Prepare the rice paper wrappers according to package instructions.

Cut the cabbage into thin strips and set aside.

Cook the shrimp until pink and set aside.

Cook the rice noodles according to package instructions and set aside.

Assemble the spring rolls by placing a small amount of noodles, shrimp, and cabbage onto a rice paper wrapper.

Add a few herbs on top of the filling and roll up the wrapper tightly.

Repeat with the remaining ingredients.

Serve the spring rolls with peanut sauce and hummus for dipping.
