Vegan Swede and Miso Tagine Stew
A comforting and flavorful vegan stew from the inspiration of North African tagine, featuring swede and miso.
Ingredients
- β1 large Swede
- β2 tablespoons Miso paste
- β2 tablespoons Ethiopian
- β2 tablespoons Olive oil
- β1 medium Onion
- β3 cloves Garlic
- β1 teaspoon Cumin
- β1 teaspoon Paprika
- βto taste Salt
- βto taste Black pepper

Heat the olive oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.

Add the cumin and paprika and cook for 1 minute.

Add the swede, miso paste, and Ethiopian.

Stir well to combine.

Add 2 cups of water and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes, or until the swede is tender.
