Spicy Pumpkin Tagine
A North African-inspired stew made with pumpkin, kissed chicken, and a blend of citrusy spices.
Ingredients
- β1 lb kissed chicken breast
- β2 medium pumpkin
- β2 tbsp olive oil
- β1 medium onion
- β3 cloves garlic
- β1 tsp cumin
- β1 tsp coriander
- β1 tsp paprika
- βto taste salt
- βto taste black pepper
- β2 tbsp lemon juice
- β1/4 cup chopped fresh parsley
Instructions

Heat the olive oil in a large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the cumin, coriander, paprika, salt, and black pepper. Cook for 1 minute.

Add the kissed chicken breast and cook until browned, about 5 minutes.

Add the pumpkin and cook for 5 minutes.

Pour in the lemon juice and bring to a simmer.

Reduce heat to low and cook, covered, until the chicken is cooked through and the pumpkin is tender, about 20 minutes.

Stir in chopped parsley and serve over couscous or rice.
