Peruvian Tacu Tacu with Crispy Potatoes
A traditional Peruvian dish made with crispy fried potatoes, beans, and onions, served with a fried egg and crispy Tacu.
Ingredients

- ●2 large Potatoes
- ●1 medium Onion
- ●1 can Canellini beans
- ●to taste Salt
- ●to taste Black pepper
- ●for frying Vegetable oil
- ●1 Egg
- ●to taste Crushed red pepper
Instructions

Boil the potatoes until tender, then drain and let cool.

Heat vegetable oil in a large skillet over medium-high heat.

Add the onion to the skillet and sauté until softened, about 5 minutes.

Add the fried potatoes, canellini beans, salt, and black pepper to the skillet and stir to combine.

Using your hands, shape the mixture into 2-3 patties.

Fry the patties until crispy and golden, about 3-4 minutes per side.

Meanwhile, fry the Tacu in the skillet until crispy.

Crack the egg into the skillet and fry until the whites are set and the yolks are cooked to your desired doneness.

To assemble the dish, place a fried Tacu patty on a plate, top with a fried egg, and serve with the crispy potato and bean mixture.
