Tarta de Santiago
A traditional Spanish almond cake from the city of Santiago, known for its simplicity and rich flavor. The cake is made with ground almonds, sugar, and egg whites, resulting in a moist and crumbly texture.

Preheat the oven to 350°F (180°C).

Grease a 9-inch (23cm) round cake pan and line the bottom with parchment paper.

In a medium bowl, whisk together the ground almonds, sugar, and almond extract.

In a separate bowl, whip the egg whites until stiff peaks form.

Gradually add the almond mixture to the egg whites, folding until well combined.

Pour the batter into the prepared pan and smooth the top.
