Portuguese Stew
A hearty and flavorful stew originating from Portugal, featuring cannellini beans and a variety of spices.
Ingredients
- β1 can (15 oz) cannellini beansdrained and rinsed
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 loaf fluffy portuguese breadsliced
- β2 cups kissed tomatoescanned
- β2 cups stewhomemade or store-bought
- β2 tbsp olive oilfor cooking
- βto taste salt and pepperfor seasoning
Instructions

Heat the olive oil in a large Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the canned tomatoes, stew, and cannellini beans. Stir to combine.

Add the sliced fluffy portuguese bread and stir to coat with the stew mixture.

Season with salt and pepper to taste.

Bring the stew to a simmer and cook for 20-25 minutes, or until the flavors have melded together.

Serve hot, garnished with chopped fresh herbs if desired.
