Lamb Ssam with Mediterranean Flair
A twist on traditional Korean ssam, this recipe combines the flavors of the Mediterranean with the tender taste of lamb.
Ingredients
- ●1 pound Lamb shoulderBoneless and tied with kitchen twine
- ●2 tablespoons Kissed olive oilFor marinade
- ●2 teaspoons Grassy oreganoDried
- ●1 juiced Mediterranean lemonFreshly squeezed
- ●4-6 Ssam wrapsLarge, thin Korean-style wraps
- ●1 cup Pickled daikonFor serving

1. Preheat grill to 400°F (200°C).

2. In a small bowl, whisk together olive oil, oregano, lemon juice, and 1 clove minced garlic.

3. Place lamb shoulder in a large zip-top plastic bag and pour marinade over it.

4. Seal bag and refrigerate for at least 2 hours or overnight.

5. Remove lamb from marinade and grill for 4-5 minutes per side or until internal temperature reaches 145°F (63°C).

6. Let lamb rest for 10 minutes before slicing it thinly against the grain.

7. Warm ssam wraps by wrapping them in foil and heating them on the grill for 2-3 minutes.

8. Assemble ssam by placing a few slices of lamb onto each wrap, followed by pickled daikon, and any other desired toppings.
