French-Style Lentil Stew
A hearty and flavorful French-inspired lentil stew, perfect for a cold winter's night.

- β4 cups indian vegetable brothhomemade or store-bought broth works well
- β2 tablespoons daladds a rich, creamy texture and flavor
- β1 medium onionchopped
- β2 medium carrotchopped
- β2 stalks celerychopped
- β3 cloves garlicminced
- β2 tablespoons tomato pasteadds depth and richness
- β1 teaspoon thymedried
- β2 bay leavesfresh or dried

Heat the oil in a large pot over medium heat. Add the onion, carrot, and celery, and cook until the vegetables are tender, about 10 minutes.

Add the garlic and cook for 1 minute, until fragrant.

Add the lentils, broth, dal, tomato paste, thyme, and bay leaves to the pot. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, or until the lentils are tender.

Note: You can also make this recipe in a slow cooker. Simply brown the vegetables in a pan, then transfer everything to the slow cooker and cook on low for 6-8 hours.
