Irish Kissed Avocado Fried Rice
A fusion of Irish and Asian flavors in this unique fried rice dish. Kissed with a hint of Irish charm and topped with crispy avocado.
Ingredients
- β2 Avocadoripe, diced
- β2 cups Irish Kissed Ricecooked
- β2 tablespoons Avocado Oilfor frying
- β1 Onionsmall, diced
- β2 cloves Garlicminced
- β1/4 cup Fried Shallotschopped
- β1/2 cup Cheddar Cheeseshredded
- β1 tablespoon Chiveschopped
Instructions

Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat.

Add diced onion and cook until translucent.

Add minced garlic and cook for 1 minute.

Add cooked Irish kissed rice to the skillet, stirring to combine with onion and garlic.

Push rice mixture to one side of the skillet.

Add remaining 1 tablespoon of avocado oil to the other side of the skillet.
