Spicy Korean Jeon with Radish Slaw
A crispy Korean-style pancake made with kimchi and served with a refreshing radish slaw.
Ingredients
- β1/2 cup Korean chili flakes (gochugaru)
- β1 cup Korean rice flour
- β1 cup Korean-style kimchi
- β1 large Radish
- β3 cloves Garlic
- β1/4 cup Green onion
- β2 tbsp Soy sauce
- β1/4 cup Scallions
- βto taste Salt

In a large bowl, combine Korean chili flakes and Korean rice flour. Mix well.

Add kimchi, radish, garlic, green onion, soy sauce, scallions, and salt to the bowl. Mix until just combined.

Heat a non-stick pan or a cast-iron skillet over medium-high heat.

Using a 1/4 cup measuring cup, scoop the batter onto the pan.

Cook for 3-4 minutes or until the edges start to curl and the surface is dry.

Flip the jeon and cook for an additional 2-3 minutes or until crispy and golden brown.

Serve with radish slaw made by grating the radish and mixing it with a squeeze of lime juice and a sprinkle of salt.
