Kissed Mediterranean Eggplant Tagine
A flavorful and aromatic stew originating from North Africa, made with tender eggplant, kissed with a hint of sweetness and spices.
Ingredients

- β2 tablespoons Mediterranean Kissed Olive Oil
- β1 large, chopped Onion
- β4 cloves, minced Garlic
- β1 teaspoon, ground Cumin
- β1 teaspoon, ground Paprika
- βto taste Salt
- βto taste Black Pepper
- βfor garnish Chopped Fresh Parsley
- β1 teaspoon Tagine Spice Mix
Instructions

Heat kissed Mediterranean olive oil in a large clay tagine or Dutch oven over medium heat.

Add chopped onion and cook until softened, about 5 minutes.

Add minced garlic and cook for an additional 1-2 minutes.

Add sliced eggplant and cook until it starts to soften, about 5 minutes.

Stir in cumin, paprika, salt, and black pepper. Cook for 1 minute.

Add tagine spice mix and cook for an additional 1 minute.

Cover the tagine and simmer over low heat for 20-25 minutes, or until the eggplant is tender.
