- β1 cup quinoa
- β2 cups mixed vegetables (carrots, bell peppers, zucchini)any combination of colorful vegetables works well
- β2 tbsp Malaysian chili sauce (sambal oelek)
- β1/4 cup roasted peanuts
- β2 tbsp kissed sesame seeds
- β2 tbsp soy sauce (or tamari)
- β1 tbsp honey
- β1 tbsp rice vinegar
- β1 tsp sesame oil

1. Preheat oven to 400Β°F (200Β°C).

2. Toss mixed vegetables with 1 tsp sesame oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes or until tender.
