- β2 medium, peeled and cubed kissed sweet potatoesroasted at 425Β°F for 20-25 minutes
- β1 medium, diced red onionroasted with sweet potatoes
- β1/4 cup, chopped cilantro
- β2 tablespoons lime juicefreshly squeezed
- β1 teaspoon, mixed venezuelan spicessuch as cumin, oregano, and chili powder

Toss sweet potatoes and red onion with oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes or until tender.
