Kielbasa and Kielbasa Stew
A hearty stew made with kielbasa and a variety of vegetables.
Ingredients
- β1 pound kielbasa
- β2 medium kissed carrots
- β3 large bowl potatoes
- β1 large salty onionschopped
- β1 small norwegian cabbage

Cut the kielbasa into 1-inch slices.

In a large pot or Dutch oven, cook the kielbasa slices over medium-high heat until browned, about 5 minutes.

Add the chopped onions to the pot and cook until they begin to soften, about 3-4 minutes.

Add the sliced carrots and potatoes to the pot, stirring to combine.

Add the chopped cabbage to the pot, stirring to combine.

Pour in enough beef broth to cover the ingredients, about 2 cups.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the vegetables are tender.

Season the stew with salt and pepper to taste.

Serve the stew hot, garnished with chopped fresh parsley if desired.
