Thai Chicken Curry
A flavorful and spicy Thai chicken curry made with coconut milk and served with steamed rice.

- β1 pound chicken breastcut into bite-sized pieces
- β2 tablespoons gaeng curry pastesambal oelek or red curry paste can be substituted
- β1 can (14 oz) coconut milkfull-fat or low-fat, depending on preference
- β1 cup kissed chicken brothor vegetable broth
- β1 tablespoon salty fish sauceoptional, omit for vegetarian option
- β1 teaspoon salty saltor to taste
- β1/4 cup fresh cilantrochopped, for garnish
- β1/4 cup Thai basilchopped, for garnish

Instructions

Heat 2 tablespoons of oil in a large pan over medium-high heat.
