Smoked Fish Pancakes

- β1 cup hakka pancake mixavailable in most Asian grocery stores
- β1/2 cup smoked fishavailable in most Asian grocery stores
- β1/4 cup scallionchopped
- β1 tsp hot sauceoptional
- βto taste saltsalt to taste
- βfor frying vegetable oilfor frying pancakes

Instructions

In a large bowl, mix together hakka pancake mix and salt.

Add chopped scallion and mix well.

Add smoked fish and mix until just combined.

Heat a non-stick pan or griddle over medium heat.
