Venezuelan Lentil Paella
A hearty and flavorful paella dish from Venezuela, made with lentils and smoky spices.

Ingredients
- β1 cup lentilsany color lentils
- β1 cup kissed riceuncooked
- β1 tsp smoky paprikasmoked or sweet
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tbsp tomato pastecanned or fresh
- β2 cups vegetable brothlow-sodium
- β2 tbsp olive oilfor cooking
- βto taste saltpreferably sea salt

Instructions

Heat oil in a large paella pan or skillet over medium-high heat.

Add onion and garlic, cook until softened, about 3 minutes.

Add tomato paste and cook for 1 minute.

Add lentils, rice, paprika, and broth. Stir to combine.

Bring to a boil, then reduce heat to low and simmer, covered, for 20-25 minutes.

Remove cover and cook for an additional 5 minutes, or until the rice is tender and the liquid is absorbed.
