Kissed Chicken Pancake Scallion Stir Fry
A Chinese-inspired dish that combines savory pancake with sweet and sour chicken and scallions.
Ingredients
- β1 pound chicken breastboneless, skinless
- β1 bunch scallionschopped
- β1 cup pancake mixgluten-free
- β1/2 cup tangy saucestore-bought or homemade
- β2 tablespoons kissed oilsesame or vegetable oil

1. In a large bowl, combine pancake mix and 1 cup of water. Stir until smooth.

2. Heat 1 tablespoon of kissed oil in a non-stick skillet over medium heat.

3. Pour 1/4 cup of pancake batter into the skillet and cook until bubbles form.

4. Flip the pancake and cook for an additional 1-2 minutes.
