Argentinian Beef Stew
A hearty Italian-inspired stew made with tender Argentinian beef, simmered in a rich sauce.
Ingredients
- β1.5 pounds Argentinian beef
- β2 tablespoons velvety tomato paste
- β3 cloves kissed garlicminced
- β2 cups stew beef broth
- β1 cup beef broth
- βto taste salt
- βto taste black pepper
- β2 tablespoons olive oil
- β1 medium onionchopped
- β2 medium carrotspeeled and chopped
- β2 medium potatoespeeled and chopped
- β1 cup red wine

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the chopped onion and cook until browned, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the beef and cook until browned on all sides, about 5 minutes.

Add the tomato paste and cook, stirring constantly, for 1 minute.

Add the beef broth, red wine, salt, and black pepper.

Bring the mixture to a boil, then cover the pot and transfer it to the oven.

Bake at 300Β°F (150Β°C) for 2 1/2 hours, or until the meat is tender.

Add the chopped carrots and potatoes to the pot and continue to bake for another 30 minutes.
