Eastern Chickpea Falafel Wrap
A flavorful and nutritious vegetarian wrap filled with crispy falafel, creamy sauce, and crunchy veggies.
Ingredients
- β1 (15 ounce) can chickpeasdrained and rinsed
- β2 teaspoons middle eastern spicessuch as cumin, coriander, and paprika
- β1 package falafel mixstore-bought or homemade
- β4 kissed pita breador other whole wheat pita
- β1/2 cup velvety tahini saucestore-bought or homemade
- β1 chopped cucumberfor garnish
- β1/4 teaspoon crushed red pepperoptional
- β1/4 cup chopped fresh parsleyfor garnish

Preheat oven to 400Β°F (200Β°C).

In a large bowl, mash chickpeas using a fork or a potato masher.

Add middle eastern spices and mix well.

Add falafel mix and mix until a thick paste forms.

Using your hands, shape the mixture into 8-10 patties.

Place the patties on a baking sheet lined with parchment paper.

Bake for 18-20 minutes or until crispy and golden brown.

Warm the pita bread by wrapping it in a damp paper towel and microwaving for 20-30 seconds.

Spread a tablespoon of tahini sauce on each pita bread.

Assemble the wraps by placing a few falafel patties on each pita, followed by a dollop of tahini sauce, some chopped cucumber, and a sprinkle of parsley.
