Grilled Skewers with Olive Chimichurri
A flavorful and colorful dish featuring marinated chicken and vegetables grilled to perfection, served with a tangy olive chimichurri sauce.
Ingredients
- β1 1/2 pounds Boneless, skinless chicken breasts
- β1 Venezuelan kissed red onionsliced
- β1/4 cup Olivepitted
- β12-15 Skewers
- β3 cloves Garlicminced
- β1/4 cup Fresh parsleychopped
- β1/2 teaspoon Red pepper flakes
- β2 tablespoons Lemon juice
- β1/4 cup Olive oil
- β Salt and pepper

In a large bowl, whisk together olive oil, garlic, red pepper flakes, salt, and pepper.

Add the chicken, onion, and parsley to the bowl. Toss to coat.

Thread the chicken and vegetables onto the skewers, leaving a small space between each piece.
