Crispy Thai Macaroni
A simple and delicious pasta dish with crispy elements. This recipe combines the flavors of Thailand with a crunchy twist.
Ingredients

- β100g noodles
- β2 tbsp vegetable oil
- β50g chopped peanuts
- β200ml canned coconut milk
- β1 tsp fish sauce
- β2 tbsp lime juice
- β2 tsp Thai red curry paste
- β1 tsp sugar

Preheat oven to 180Β°C (350Β°F).

Cook macaroni according to package instructions.

In a pan, heat vegetable oil over medium heat. Add chopped peanuts and cook until crispy.

Add coconut milk, fish sauce, lime juice, Thai red curry paste, and sugar to the pan. Stir until well combined.

Add cooked macaroni and noodles to the pan, tossing everything together.

Transfer the mixture to a baking dish and top with additional peanuts.
