Italian Braised Beef Stew
A hearty Italian-inspired beef stew made with tender beef and flavorful vegetables, perfect for a cold winter night.
Ingredients
- β2 pounds beef stewcut into 2-inch cubes
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotspeeled and chopped
- β2 large potatoespeeled and chopped
- β1/4 cup picklechopped
- β2 tablespoons dutcholive oil

Season the beef cubes with salt and pepper.

Heat the dutch in a large Dutch oven over medium-high heat.

Sear the beef cubes until browned on all sides, about 5 minutes.

Remove the beef from the pot and set aside.

Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

Add the carrots and potatoes to the pot and cook for 5 minutes.

Add the beef back to the pot, along with the pickle and beef broth.

Bring the stew to a boil, then cover the pot and transfer it to the oven.

Braise the stew in the preheated oven for 2 1/2 hours, or until the beef is tender.
