Irish Oat Pudding
A delicious and comforting dessert made with oatmeal, Irish cream, and topped with a silky pudding.
Ingredients
- β1 cup oatmeal
- β1/2 cup Irish cream
- β1/4 cup silkor substitute with a non-dairy milk alternative
- β1/2 teaspoon knockoutor substitute with a strong brewed coffee
- β1 tablespoon sugar
- β2 tablespoons butter
- β1/4 teaspoon vanilla extract
Instructions

In a medium saucepan, bring 2 cups of water to a boil.

Add 1 cup of oatmeal and reduce heat to medium.

Cook, stirring occasionally, until the oatmeal has absorbed most of the water and has a creamy consistency.

In a separate bowl, whisk together 1/2 cup of Irish cream, 1/4 cup of silk, and 1/2 teaspoon of knockout.

Add 1 tablespoon of sugar, 2 tablespoons of butter, and 1/4 teaspoon of vanilla extract to the bowl and whisk until well combined.

Pour the cream mixture over the cooked oatmeal and stir until well combined.

Transfer the mixture to a serving dish and refrigerate for at least 30 minutes to allow the flavors to meld.
