Bhuna Oxtail Stew
A hearty and flavorful stew made with oxtail, bhuna curry paste, and kosher salt, perfect for a cold winter's day.
Ingredients

- β1 teaspoon kosher salt
- β1/2 teaspoon black pepper
- β2 tablespoons bhuna curry paste
- β2 tablespoons vegetable oil
- β1 large onionchopped
- β3 cloves garlicminced
- β1 large tomatodiced

Season the oxtail with kosher salt and black pepper.

Heat the oil in a large Dutch oven over medium-high heat.

Sear the oxtail until browned on all sides, about 2 minutes per side.

Remove the oxtail from the pot and set it aside.

Add the onion and garlic to the pot and cook until the onion is translucent.

Add the curry paste and cook for 1 minute.

Add the tomato and cook for 2 minutes.

Add the browned oxtail back to the pot and add enough water to cover the meat.

Bring the stew to a boil, then reduce the heat to low and simmer for 2 1/2 hours, or until the meat is tender.
