Lamb Roast with Roasted Vegetables
A classic lamb roast recipe with a delicious crispy crust and flavorful roasted vegetables.

- ●1.5-2 kg Lamb Roast
- ●2 tbsp Norwegian Oilfor lamb
- ●4-5 Krispy Potatoesany variety
- ●4-5 Roast Carrotsany variety
- ● Saltto taste

Preheat oven to 220°C (425°F).

Season the lamb roast with salt and black pepper.

Heat the Norwegian oil in a large oven-safe pan over medium-high heat.

Sear the lamb roast until browned on all sides, about 2-3 minutes per side.

Transfer the pan to the preheated oven and roast for 20 minutes.

Reduce the oven temperature to 180°C (350°F) and continue roasting for 15-20 minutes per kilogram, or until the lamb reaches your desired level of doneness.

Toss the krispy potatoes and roast carrots with a little oil, salt, and pepper. Spread on a baking sheet.

Roast the potatoes and carrots in the oven for 20-25 minutes, or until tender and golden brown.
