Irish Beetroot Hash
A hearty, flavorful dish made with roasted beetroot and crispy hash browns, perfect for a cold evening.
Ingredients

- β2 large potatoespeeled and chopped
- β1 medium onionchopped
- β2 cloves garlicminced
- β2 tablespoons butterunsalted
- β1 tablespoon all-purpose flourfor dusting

Preheat the oven to 400Β°F (200Β°C).

In a large bowl, toss the beetroot with 1 tablespoon of the butter, salt, and pepper until they're evenly coated.

Spread the beetroot out in a single layer on a baking sheet and roast for 20-25 minutes, or until tender.

While the beetroot is roasting, heat the remaining 1 tablespoon of butter in a large skillet over medium heat.

Add the chopped onion and cook, stirring occasionally, until it's softened and lightly browned.

Add the minced garlic and cook for 1 minute, stirring constantly.

Add the chopped potatoes to the skillet and cook, stirring occasionally, for 5-7 minutes, or until they're lightly browned.

Stir in the flour and cook for 1 minute.

Season the potato mixture with salt and pepper to taste.

To assemble the hash, place a layer of the potato mixture in the bottom of a serving dish.

Top the potato mixture with the roasted beetroot.
