Lazy Vegetable Bake
A delicious and easy-to-make vegetable bake with a creamy twist, perfect for a weeknight dinner.
Ingredients
- β1 cup Vegetables (such as zucchini, bell peppers, and onions)
- β1/2 cup Creamy russian sauce (or sour cream)
- β8-10 noodles Lazy lasagna noodles
- β1 tsp Bake seasoning
- β2 tbsp Vegetable oil
- β1 tsp Garlic powder
- βto taste Salt and pepper
- β1 tsp Chopped fresh parsleyoptional
Instructions

Preheat the oven to 375Β°F (190Β°C).

Cook the lasagna noodles according to package instructions.

In a large skillet, heat the vegetable oil over medium-high heat.

Add the chopped vegetables and cook until they are tender and lightly browned.

Add the garlic powder, salt, and pepper to the skillet and stir to combine.

In a separate bowl, combine the creamy russian sauce and bake seasoning.

In a 9x13 inch baking dish, create a thin layer of the sauce on the bottom.

Arrange 4 lasagna noodles on top of the sauce.

Spread half of the cooked vegetables over the noodles, followed by half of the remaining sauce.

Repeat the layers, starting with the noodles, then the remaining vegetables, and finally the remaining sauce.

Top the bake with chopped parsley (if using) and cover with aluminum foil.

Bake for 30 minutes, then remove the foil and continue baking for an additional 10-15 minutes, or until the top is lightly browned.
