Paleo Ginger Chicken Bowl
A healthy and flavorful paleo meal featuring ginger chicken, served in a bowl with fresh ingredients
Ingredients
- β1 1/2 pounds boneless chicken breastscut into bite-sized pieces
- β2 tablespoons fresh gingergrated
- β2 tablespoons olive oilfor cooking
- β2 tablespoons coconut aminospaleo alternative to soy sauce
- β1 cup green onionschopped
- β1 cup shredded carrotsfor garnish
- β1 cup cucumber slicesfor garnish

Preheat oven to 400Β°F (200Β°C).

In a large bowl, whisk together coconut aminos, grated ginger, and olive oil. Add the chicken and toss to coat.

While the chicken is cooking, prepare the bowl ingredients by chopping green onions and shredding carrots.
