Sunday Basque Quiche
A French-inspired quiche filled with the rich flavors of Basque cuisine, perfect for a relaxing Sunday morning.

- ●1/2 cup, crumbled Sunday sausage
- ●4 large eggs Lazy eggs
- ●1 large onion, diced Onion
- ●1 cup shredded Gruyère French cheese

Preheat the oven to 375°F (190°C).

Roll out the yellow cornmeal into a circle, about 1/4-inch thick.

In a separate pan, sauté the crumbled Sunday sausage until lightly browned.

In a separate bowl, whisk the lazy eggs and set aside.

Add the diced onion to the bowl with the whisked eggs and mix well.

Spread the cooked sausage evenly over the cornmeal circle, leaving a 1-inch border around the edges.

Pour the egg and onion mixture over the sausage.
