Malaysian Chicken Curry
A popular and flavorful dish from Malaysia, made with juicy chicken and a rich, spicy curry sauce.
Ingredients
- β1 pound boneless, skinless chicken breastcut into bite-sized pieces
- β2 tablespoons coconut oilfor sautΓ©ing
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 teaspoons curry powderadjust to taste
- β1 cup chicken brothlow-sodium
- β1 can coconut milk14 oz
- β2 tablespoons fish sauceoptional, for added flavor

Heat the coconut oil in a large skillet over medium-high heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.
