Smoky Sunday Casserole
A hearty and comforting casserole perfect for a Sunday gathering. The combination of smoked sausage and sweet potatoes makes it a crowd-pleaser.
Ingredients
- β1 lb Smoked Sausage
- β2 large Sweet Potatoes
- β1 can Canned Diced Tomatoes
- β2 tbsp Olive Oil
- β1 medium Onion
- β3 cloves Garlic
- β1 cup Cheddar Cheese
- β1/2 cup Breadcrumbs
- βto taste Salt
- βto taste Pepper

Preheat oven to 375Β°F (190Β°C).

Cook the smoked sausage in a large skillet over medium-high heat until browned, about 5 minutes.

Add the onion and garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.

Add the sweet potatoes, diced tomatoes, olive oil, salt, and pepper to the skillet. Stir to combine.

Transfer the mixture to a 9x13 inch baking dish.

Top the mixture with the cheddar cheese and breadcrumbs.
