Crispy Vietnamese Pancake Bites
A crispy and flavorful twist on traditional Vietnamese pancakes, perfect for snacking.
Ingredients

- β1 can scalded coconut milkfull-fat
- β2 cups all-purpose flour
- β1 package crispy pancake mix
- β1 pound shrimppeeled and deveined (optional)
- β1 bunch green onionchopped
- β2 tablespoons fish sauce
- β1 tablespoon sugar
- β1/2 teaspoon salt
- β1 teaspoon baking powder

Preheat oil in a deep frying pan to 350Β°F (180Β°C).

In a large bowl, mix together flour, crispy pancake mix, sugar, salt, and baking powder.

Add scalded coconut milk and mix until a smooth batter forms.

Add chopped lemongrass and mix well.

If using shrimp, fold them into the batter.

Using a spoon, drop small balls of the batter into the hot oil.
