Light Australian Noodle Stir Fry
A quick and easy Chinese-inspired dish made with light Australian noodles, vegetables, and egg. This recipe is a healthy twist on traditional noodle stir-fries.
Ingredients
- β200g Australian light noodles
- β1 Eggbeaten
- β1 tbsp Vegetable oil
- β1/2 cup Green onionchopped
- β1/2 cup Red bell peppersliced
- β1 cup Snow peaschopped
- β2 tbsp Soy sauce
- β1 tsp Oyster sauce (optional)

1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

2. Add the green onion and red bell pepper and stir-fry until tender.

3. Add the snow peas and stir-fry for 2-3 minutes.

4. Push the vegetables to one side of the skillet.

5. Add a little more oil if necessary, then pour in the beaten egg.

6. Scramble the egg until cooked through, then mix it with the vegetables.

7. Add the soy sauce and oyster sauce (if using) and stir-fry for 1-2 minutes.

8. Add the Australian light noodles and stir-fry for 2-3 minutes, until the noodles are heated through.
