Australian-Style Pavlova
A classic Australian meringue-based dessert topped with fresh fruits.
Ingredients
- β3 Large egg whites
- β1 cup Granulated sugar
- β1/2 cup Light brown sugar
- β1 tsp Vanilla extract
- β1 cup All-purpose flour
- β1/2 cup Unsalted butter, softened
- β2 cups Confectioners' sugar
- β2 cups Fresh strawberries, sliced
- β1 cup Fresh blueberries
- β1 cup Fresh kiwi, peeled and sliced

Preheat the oven to 150Β°C (300Β°F).

Line a baking sheet with parchment paper.

In a large mixing bowl, beat the egg whites until stiff peaks form.

Gradually add the granulated sugar, brown sugar, and vanilla extract to the egg whites.

Beat until stiff and glossy.

Sift the flour over the meringue mixture and fold gently.

Transfer the meringue mixture to a piping bag fitted with a large round tip.

Pipe the meringue onto the prepared baking sheet in a round shape, about 24cm (9.5in) in diameter.

Bake for 1 1/2 hours, or until the meringue is crisp and dry.

Remove from the oven and let cool completely.

To assemble, place the cooled meringue on a serving plate or cake stand.

Dust the meringue with confectioners' sugar.

Arrange the sliced strawberries, blueberries, and kiwi on top of the meringue.
