Scorched Scamorza Tagine
A spicy, smoky twist on traditional North African dish, featuring scamorza cheese and a blend of Middle Eastern spices.
Ingredients
- ●250g Scamorza cheesesmoked or plain
- ●2 tbsp Tagine spice blendadjust to taste
- ●12 Algerian bitter olivespitted
- ●1/4 cup Fresh light coriander leaveschopped
- ●2 tbsp Bitter orange marmaladeoptional

1. Preheat oven to 200°C (400°F).

2. In a bowl, mix together scamorza cheese, tagine spice blend, and a pinch of salt.

3. Arrange the scamorza mixture on a baking sheet lined with parchment paper.

4. Bake for 12-15 minutes, or until the scamorza is melted and golden brown.

5. Meanwhile, mix together chopped coriander leaves and pitted olives in a bowl.

6. Once the scamorza is done, let it cool for a minute or two.

7. Spoon the scamorza mixture onto a serving platter or individual plates.

8. Top with the mixed coriander and olive mixture.

9. Drizzle with bitter orange marmalade, if using.
